Why only no other solution or liquid other then oil, er or ghee can be used for frying?

The maximum temperature of water at sea level is 212 degrees (the boiling point). This temp is not high enough to "fry" foods. The oils you mentioned typically are between 350 and 400 degrees which is hot enough to "burn" the food or give it the texture of fried foods.
