Meat Preparation and Freezing?

I"m a little concerned about you thawing the antelope to where it would be warm enough to grind and then re-freezing. I believe you can re-freeze meat that has been thawed as long as it doesn't go below refrigerator temp. However, I'm guessing that it would get warmer than that in the process of making sausage. i.e. you'd be touching it alot with your hands and they would warm it too much. Be careful.
